All Roger Goulart cavas are made with grapes from vineyards located within the Cava Appellation of Origin (D.O. Cava), and under the legislation established by the Regulatory Board.
The D.O. Cava regulates the minimum time for the bottle aging of cavas, although at Roger Goulart we normally carry out a longer aging period. We follow the traditional method in our production of sparkling wines.
The D.O.Cava is made up of different zones, different climate, soils and territories that give rise to very diverse Cavas. Roger Goulart's cavas come from Comtats de Barcelona.
