In this edition, the winery achieved two accolades in the sparkling wine category:<\/p>\n<ul style=\"font-weight: 400;\">\n<li><strong>Gold Medal<\/strong> for <a href=\"https:\/\/www.rogergoulart.com\/en\/cavas\/roger-goulart-brut-coral-rose\/\"><strong>Roger Goulart Brut Coral Ros\u00e9 2023<\/strong><\/a><\/li>\n<li><strong>Silver Medal<\/strong> for <a href=\"https:\/\/www.rogergoulart.com\/en\/cavas\/roger-goulart-brut-rose\/\"><strong>Roger Goulart Ros\u00e9 Mill\u00e9sim\u00e9 2023<\/strong><\/a><\/li>\n<\/ul>\n<p style=\"font-weight: 400;\">Both cavas, which will be released to the market soon, share a meticulous winemaking process. Each grape variety is vinified separately, with a short skin maceration at low temperature. Pressing yields are limited to 50%, and the base wines ferment at 16\u201318 \u00b0C with selected yeasts, resulting in wines with marked acidity and low pH \u2014 ideal for long ageing.<\/p>\n<p style=\"font-weight: 400;\">After bottling for the second fermentation (<em>tirage<\/em>), the wines are aged in the winery\u2019s historic underground cellars, excavated 30 metres below ground.
